Margarita Cupcakes
With Cinco de Mayo just around the corner these margarita cupcakes with lime icing make the perfect celebratory dessert all summer long.
They are light in flavor (not in calories!) and are friendly for the whole family. Kiddos and preggos included! (No tequila!)
Margarita Cupcake Recipe
It was harder than I thought to find a recipe for margarita cupcakes without tequila. I mostly followed this recipe I found online.
Ingredients
For the Cupcake Mix
- 1 box of store-bought white cake mix (I used Duncan Hines Classic White)
- 1 can of frozen limeade concentrate
- 3 egg whites
- 2 tablespoons canola oil
- 1 tablespoon lime zest
For the Icing
- 1 stick of butter, softened
- 1 8-oz package of cream cheese, softened
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 5 cups powdered sugar
- Green food coloring
Extra
- Decorative sugar crystals
- Lime wedges
- Paper straws
- Cupcake liners
Directions
Heat oven to 325 degrees and prepare cupcake pans with cupcake liners.
Mix cake mix, thawed limeade, egg whites, canola oil and lime zest in a large bowl using an electric mixer.
Fill cupcake liners 2/3 full.
Bake at 325 degrees according to cake box directions (18-22 minutes) or until a toothpick inserted in the center comes out clean.
Let cupcakes cool completely.
For the icing: Beat butter, cream cheese, lime juice and lime zest with an electric mixer until mixture is light and fluffy.
As you continue to mix add powdered sugar one cup at a time.
I added a few drops of green food coloring to achieve the lime green margarita color.
Use icing tip and disposable decorating bags to ice cupcakes.
Dress them up with green and white decorative sugar crystals,
A lime wedge,
And a playful pink and white paper straw.
They turned out delicious and Hubby and John Davis gave them the final stamp of approval.
